- 2 large, ripe bananas, well mashed
- 2 cups finely shredded, unsweetened, coconut flakes
- ¼ cup coconut flour
- 1/3 cup coconut oil, melted
- 2-3 Tbsp. raw honey
- 1-2 tsp. vanilla extract
- 1 tsp. cinnamon
- 1 Tbsp. grass-fed gelatin (optional)
- Pinch of sea salt
- Preheat oven to 350° F.
- Place all ingredients in bowl and mix thoroughly until paste forms.
- Form into cookies, garnish with coconut flakes, and place on baking sheet greased with coconut oil (or lined with parchment paper).
- Bake 17-20 minutes, or until golden brown.
- Allow to cool and enjoy!
