- 1 lb. carrots, roughly chopped
- 1 can full-fat coconut milk
- 1 large onion, diced
- 1 apple, chopped
- 3-4 cloves garlic, minced
- 3-4 Tbsp. ground or fresh grated ginger
- Cooking fat
- Sea salt
- Freshly ground pepper
- Sauté diced onion and garlic in cooking fat until translucent and fragrant.
- Place carrots, coconut milk, sautéed onion and garlic, and apple into a high speed blender and mix thoroughly.
- Pour mixture into a saucepan. Heat and add seasonings to taste.
