- 2 cups shredded coconut
- 3 Tbsp. coconut butter
- 4 Tbsp. coconut oil (melted)
- 1/3 cup carob (or cocoa) powder
- 3 Tbsp. raw honey
- 2-3 drops peppermint essential oil
- 1 Tbsp. collagen powder
- 2 Tbsp. gelatin powder
- 1 tsp. sea salt
- Combine all ingredients, except shredded coconut, in large bowl and mix.
- Add shredded coconut and combine.
- Form mixture into compact, bite-sized balls.
- Place onto glass dish greased with coconut oil (or use parchment paper).
- Chill in fridge for 1 hour.
- Enjoy!
- Makes about 18 balls.
